garlic and greens soup















Very simple flavors yet delicious. A lot of things can be added to this soup. However some things don't do well: tomatoes, bell peppers.

Ingredients:
garlic
carrots
celery
onions
potatoes
greens (kale/chard/collards/bok choy)
tofu/cooked chickpeas
bok choy (optional)
asparagus (optional)
mushrooms (optional)
vegetable bouillon
IMP: brown rice vinegar for acidity
salt and pepper.

Saute hard vegetables first (celery/onions/potatoes/carrots) and then add the rest of the veggies & veg boullion with water, bring to a boil. simmer for 15 minutes. Add brown rice vinegar last and adjust to taste.
