pineapple upside down cake

Pineapple Upside-Down Cake

1 1/4 cups flour (i used 1 cup white and 1/4 whole wheat)
1/2 cup vegan sugar (i used turbinado)
3 tbsp brown sugar
1 tsp baking soda
1/2 tsp salt
1 bottle of maraschino cherries or 6-8 real cherries (pitted)
1 20 oz can pineapple slices in unsweetened pineapple juice
1 cup pineapple juice reserved from can of slices
1/3 cup unsweetened applesauce
1 tbsp white vinegar
1 spring-form pan or angel food cake pan
non-stick spray (or whatever you use)

1) Preheat oven to 350 degrees.
2) Mix together flour, sugar, baking soda, salt, and set aside.
3) In separate bowl, mix pineapple juice, applesauce, and vinegar.
4) Take pan and spray with non-stick spray all the way up the sides too.
5) Lay pineapple rounds in a design on the bottom of the pan (this will be the top, so make it look pretty! Cut pineapple slices into chunks and arrange around whole slices for extra pineapple-ocity.
6) Take cherries and arrange in pineapple holes and evenly through the top so every slice gets some.
7) Sprinkle pineapple and cherries evenly with brown sugar.
8) Quickly mix the wet ingredients with the dry. Batter will foam up nicely.
9) Pour into pan immediately and bake for about 30-35 minutes or till center is firm.

Hazelnut cacao smoothie

Hazelnuts and cacao beans smoothie in the vitamix is to die for. To make it thick, I add flax seeds, hemp seeds and chia seeds. Sweeten it with dates or agave.

Don't know if the cacao beans should be soaked?

Some fruits go well with it. Apples are good but strawberries not :(

raw cacao smoothies


1 C cold filtered water
1 C non-dairy milk (we use hemp milk)
2 heaping T raw organic cacao powder
1/2 C raw cashews
1/2 vanilla bean or 1 tsp vanilla extract
1 T organic coconut cream concentrate
2-4 sweet dates (pitted)
2 tsp maca (optional)
1 T hemp protein powder (optional)
1 T raw agave syrup

Seitan stir fried

Seitan is wheat gluten and can be found pre made at rainbow/whole foods.

The recipe is very basic. Saute onions, garlic, bell pepers in sesame oil. Add some hot peppers if desiered. Allow onions to caramelize. Add seitan and soy sauce and simmer for while. Serve on a bed of spinach with brown rice


Steve's soup recipe

Really hearty soup. The thyme and sage add complexity. Goes good with a dense bread like Rye bread.



Recipe:

2 stalks celery, diced
1 medium onion, diced
2 cloves garlic (or more to taste) crushed
4 cups red potatoes, cubed
1 carrot, cubed OR 1 parsnip
5 cups vegetable broth
4 cups swiss chard, chopped
2 tsp dried, crushed sage
1 bay leaf
1/4 cup chopped fresh parsley or cilantro (preferred)
salt and pepper to taste
hot peppers (optional) to taste

1. Saute first three ingredients until soft - about 5 minutes
2. Add potatoes, broth, carrot (parsnip), thyme, bay leaf, hot pepper, bring to boil, simmer for 30 minutes
3. Add swiss chard, parsley, adjust seasonings, simmer for 10 minutes
4. Puree 2 cups of soup, add back to remaining liquid

slow cooked refried beans
















































Recipe from Roger of soul cocina:
soak beans overnight, discard water.
Saute onions, carrots, celery, fennel, bay leaf/avocado leaf, dried chilies, garlic
add soaked and washed beans and bring to a boil. Slow cook for 4-5 hours. puree them at the end. Add lemon/lime for some acidity.

Goes well with brown rice or corn tortillas

Strawberry coconut smoothie

Vitamix this: strawberries, coconut milk, vanilla extract, soaked almonds and a few dates. Simple yet amazingly delicious

garlic and greens soup















Very simple flavors yet delicious. A lot of things can be added to this soup. However some things don't do well: tomatoes, bell peppers.

Ingredients:
garlic
carrots
celery
onions
potatoes
greens (kale/chard/collards/bok choy)
tofu/cooked chickpeas
bok choy (optional)
asparagus (optional)
mushrooms (optional)
vegetable bouillon
IMP: brown rice vinegar for acidity
salt and pepper.

Saute hard vegetables first (celery/onions/potatoes/carrots) and then add the rest of the veggies & veg boullion with water, bring to a boil. simmer for 15 minutes. Add brown rice vinegar last and adjust to taste.
